New Tudanca burgers at O'hara's
O'hara's Irish tavern, famous for its large assortment of beers and the quality of its hamburgers, recently invited us to the presentation of its latest addition to the menu, hamburgers made 100% with Tudanca beef, a breed native to the mountains of the interior of Cantabria. Currently there are about 12.000 heads of cattle of this type, of which approximately 200 belong to the Anievas ranch, co-host of the event. These cows – known as sporting cows – They are raised in a semi-wild state in the mountains for almost their entire life, spending 4 months in stables before being slaughtered, which helps create veins of fat in the meat since it is more juicy.
Before starting the tasting with the other media we had the privilege of trying one of the burgers in format great: tudanca meat with caramelized onion, liver and a slight reduction to Pedro Ximénez, accompanied by lettuce, tomato, apple and goat cheese; sandwiched in O'hara's classic muffin breads. We were quite surprised to see a piece of apple in the burger, but the pairing with the hamburger foie It made for a delicious combination.
The 6 burgers we tried afterwards were in min formati (50 g.), each of them sandwiched in a type of bread (cereal, muffin, tomato). They were not accompanied by anything else, since the additives went into the hamburger steak itself. They had all kinds of ingredients, such as foie, lime, cilantro, caramelized onion, parmesan cheese and sunflower seeds. The one we liked the most was the one that was made 100% tudanca meat, without additives; since this is a meat with a strong flavor, similar to that of game meat, which in our opinion made it the most authentic.
In short, a enriching experience trying a type of meat that until then was unknown to us. Now we hope you try it and share your opinion with all of us.
